Ces \u00e9mulsions sont stabilis\u00e9es avec la gomme xanthane. Les \u00e9mulsions H\/E\/H sont pr\u00e9par\u00e9es par le proc\u00e9d\u00e9 \u00e0 deux \u00e9tapes. Les mesures conductim\u00e9triques ont montr\u00e9 que la phase externe des \u00e9mulsions formul\u00e9es est huileuse avec un pH relativement neutre (environ 6.40). Les analyses micrographiques ont montr\u00e9 la multiplicit\u00e9 des \u00e9mulsions. Les analyses rh\u00e9ologiques effectu\u00e9es ont permis de mettre en \u00e9vidence la relation entre la structure interne des \u00e9mulsions multiples et leur comportement m\u00e9canique.
